Avocado, Tahini and Egg

Just a quick post today sharing a really quick and easy lunch that I enjoy having. I always find that I just use tahini for making hummus so enjoy new uses for it such as this. I have also been experimenting with tahini dressings for salads (hopefully some new and exciting recipes to follow!).

Avocado, Tahini and Egg

Ingredients (serves 1)

  • 1/2 avocado, sliced
  • 1 egg
  • 2 tsp tahini
  • 1 slice bread
  • Pinch cayenne pepper
  • 1 tsp lemon juice

Method

  1. Place the egg into a pan of simmering water and cook for 5 minutes, then de shell.
  2. Place the bread in your toaster. While the bread is toasting slice your avocado and cover in the lemon juice.
  3. To assemble, spread the tahini on your toast, place the avocado on top followed by the egg. Sprinkle with cayenne pepper.
