This is now one of my all time favourite recipes. The addition of coconut into the enriched dough forms a wonderfully soft sweet dough. It is how I will make all enriched doughs from now on. The dough however is very wet to begin with, I would definitely recommend making this in a freestanding mixer with a dough hook as kneading by hand would be very messy!
This bread reminds me of the Skolebrød, which is a sweet dough with custard in the centre and topped with desiccated coconut, I used to love in Norway except replacing the custard with chocolate. Now that I know this dough recipe works I am going to attempt to make my own Skolebrød soon.
Coconut Bread with Chocolate and Cardamom
Ingredients
For the dough
- 300g strong white flour
- 100g creamed coconut
- 200ml boiling water
- 2 tbsp caster sugar
- 1 tsp salt
- 7g fast action yeast
- 1 egg
For the filling
- 6 cardamom pods
- 2 tbsp cocoa powder
- 2 tbsp ground almonds
- 2 tbsp caster sugar
- 2 tbsp water
Method
- Place the flour and yeast in your freestanding mixer bowl. In a jug mix the creamed coconut and water until dissolved, add the sugar and salt. Pour the mixture onto the flour, add the egg then mix in your machine for 10-15 minutes until the dough comes away from the sides of the bowl.
- Cover the bowl in cling film and leave to prove for 1 to 1 and 1/2 hours.
- To make the filling crush the cardamom seeds in a pestle and mortar, then add the cocoa, almonds and sugar and mix. Add the water and mix until it forms a paste.
- Roll out the dough until it is 5mm thick. Spread the filling over all of dough, then roll the dough along the longest edge to form a tight swirl. Cut the roll in half down its length then twist the two pieces together then shape into a circle and join the ends together. Place on a lined baking tray.
- Leave to rise for a further 15-20 minutes. Bake in the oven at 190C for 25-30 minutes.

I adore cardamom. It is an underused spice in my opinion. I actually have been sprinkling a little in my matcha green tea in the mornings!
