This is just a quick post for a really simple salad dressing that I love. I really enjoy making homemade salad dressings as more often than not they are far better than shop bought and contain fresh ingredients and no preservatives. We have lots of pot of herbs which are all smelling amazing at the moment which make great bases to salad dressings. I haven’t used lemon thyme very much this year but used so much last year so I am very happy that our plant is now ready to start using. The extra virgin olive oil that I used in this recipe had such a deep green colour so made the dressing look wonderfully colourful and fresh. We had this over home grown salad leaves which was very simple but delicious. I think the secret to any dish tasting amazing is fresh herbs as it really lifts and brightens anything!
Lemon Thyme and Oregano Salad Dressing
Ingredients (dresses a salad for 6 people)
- Handful lemon thyme
- Handful oregano
- 3 tbsp extra virgin olive oil
- 3 tbsp white wine vinegar
- Juice of 1 lemon
- Salt and pepper, to taste
Method
- Chop the herbs finely. Place in a cup or a jar with the rest of the ingredients. Shake or mix well!
