Yes this is my third hummus recipe this year but I do love hummus. This smoked garlic hummus is wonderful for autumn, smokey with a hint of chilli from the chipotle chilli flakes I top it with. I love having this with paprika sweet potato wedges as a quick and easy autumn dinner. If you can not get hold of smoked garlic then roasted garlic (see my recipe here for how to make roasted garlic) would also work wonderfully.
Autumn is most definitely here already and it is only the 5th of September. Autumn in the Highlands is beautiful, I love heather and at the moment everywhere is just covered in amazing swathes of purple heather. The temperature is hovering around 10C so I am enjoying warm bowls of porridge and hot chocolate and I have decided this year to start planning Christmas presents now (don’t shout at me for mentioning Christmas already!). Some years I am really organised and have planned and bought everything well in advance and then some years I am dashing down to the shops on Christmas Eve still looking for last minute presents. I’m hoping that this year is going to be an organised Christmas as I am already thinking about it. I’m going to be making lots of homemade gifts for hampers so I am going to start sharing the recipes with you incase anyone would like to make homemade hampers for their loved ones.
Smoked Garlic Hummus
- 1 bulb smoked garlic
- 1 tin chickpeas
- juice of 1 lemon
- 1 tbsp tahini
- 2 tbsp extra virgin olive oil
- 1 tsp smoked paprika
- 1/2 tsp chipotle chilli flakes
- salt and pepper, to taste
- optional 2-3 tbsp water to make it smoother.
- Place all of the ingredients into a food processor and blitz for 5 minutes or until smooth.
- Place in a bowl then sprinkle the smoked paprika and chipotle chilli flakes.
