This is going to be a quick post!! I’m sitting here writing this post two minutes after having demolished this for my lunch! You learn to eat quickly when you have a small baby as you don’t know when you will have time to eat next. I videoed how I manage to take photos of my food whilst learning to look after Rowan and posted it on my Instagram stories so check it out. The gist of it is that I usually have Rowan in my sling so I have both hands available, plus he does not like being put down! I have to be really quick too, no time to set up and add extra props, just plate up and snap!
This is a really quick and simple lunch, I think it is going to become a household staple. It only takes 5-10 minutes to make (longer with a tiny human!) yet is really nourishing. I have to make sure I am keeping my calorie intake up for breastfeeding yet still getting a balanced diet (just to be clear though I am still eating my weight in chocolate!).
Mushrooms and Humous on Toast
Ingredients (serves 1)
- 100g chestnut mushrooms, sliced
- 2 cloves garlic, sliced
- Juice of 1/3 lemon
- Handful of parsley
- 2 tbsp humous
- Two slices of bread (I used homemade granary), toasted
- Salt and pepper
Method
- Place the mushrooms in a skillet or frying pan with a drizzle of extra virgin olive oil. Cook for a few minutes until they are just starting to soften, then add the garlic and cook for a further couple of minutes. Add the lemon juice, parsley, salt and pepper, stir everything through then take off the heat.
- Spread the humous on the toast, then top with the mushrooms!
