G R E E N T A C O S | with all of the warm weather we have been having, tacos are a great and really easy meal to make. These are my green tacos, cashew cream, @belazu_co zhoug spice paste, kiwi and avocado salsa, sticky tofu and asparagus! Now I know that sounds like a lot going on but they are delicious! I love tacos because with a few very simple ingredients you can make a really tasty meal! .

B R I T I S H S T R A W B E R R I E S | I found the first British strawberries in the shops yesterday so we just had to buy them! We also got British raspberries too but we ate them as soon as we got home! I love British soft fruit season and can not wait to take Rowan strawberry picking this year!
I made a wonderful vanilla almond milk porridge, topped with strawberries, almond butter, cacao nibs, coconut flakes and maple syrup. It was delicious and as you can see after having devoured his strawberries, Rowan decided mine were fair game too!! I am loving this weather so much, we have been outdoors all day everyday, playing in the garden, gardening, going for walks. I hope we get lots more weather like this! .

Q U I N O A C H I L L I B O W L | this is what we (I say we let’s be clear Rowan refused to eat any of it!) had for dinner last night. It is a really quick and easy dinner yet delicious, plus it’s all made in one pan so saves on the washing up! I served it with a quick guacamole, lime wedges and yoghurt for Rowan. Rowan is having a tricky time with food at the moment. I’m sure it will pass so I’m just keeping giving him things to try and not feeling guilty if I have to give him a bowl of porridge before bed so he has a full tummy. I used @merchantgourmet British quinoa in this which was delicious!
If you are making this for children you can leave out the chipotle chilli flakes and just sprinkle some on top of the adult portions.
Ingredients - 1 small onion, finely chopped
- 2 garlic cloves, crushed - 1 red bell pepper, diced
- 1 courgette, diced
- 1 tsp smoked paprika
- 1 tsp ground cumin
- 1 tsp chipotle chilli flakes (optional) - 1 tin chopped tomatoes
- 1 tbsp tomato purée
- 3 cups vegetable stock - 1 cup quinoa - 1 tin kidney beans, drained and rinsed
- 1/2 cup sweetcorn
Method • On a medium heat, sweat down the onions, garlic and red pepper for 10 minutes. Add the courgette and cook for another 5 minutes. • Add the spices and cook for a minute. Then add the quinoa, chopped tomatoes, tomato purée and stock. Bring to the the boil then reduce to a simmer. Cook for 15-20 minutes until your quinoa is cooked.
•Add the kidney beans and sweetcorn and heat until cooked through.
Serve and top with any extras you like! .

F A M I L Y F E A S T S | I love cooking for my family. Last night we had my brother @alex_wood_carving and his partner @abipate_illustration round for dinner. I made my really simple yet very delicious aubergine, green pepper and mango biryani. I roast the vegetables in Indian spices then mix them through the rice, mango, coriander and lime juice. I then cook little extras to have with it, yesterday I toasted some cashews, griddled some halloumi and then served it with raita, naan bread and Indian pickles. It was delicious. Rowan wasn’t too keen on it yesterday although on other days he will devour it. We have friends coming for Easter weekend and this is definitely going to be one of the dishes I make! .

C A U L I F L O W E R S O U P | the weather has been crazy here today, snow, sleet, freezing rain, sunshine, rain. With all of that going on I retreated back to a comforting soup for dinner tonight roast cauliflower and miso soup. It is incredibly easy to make and really delicious. The miso adds a wonderful flavour to the soup and the lemon lifts it up.
Ingredients
• 1 head of cauliflower cut into florets
• 2 shallots roughly chopped
• 3 garlic cloves
• 750 ml vegetable stock • 1/2 tsp miso
• 3 sprigs thyme • juice of 1/2 lemon • extra virgin olive oil, for drizzling • salt and pepper, to taste
Method - Place the cauliflower, shallots and garlic on a roasting tray, cover with olive oil, salt and pepper and roast for 30 minutes at 200C. Remove from the oven and keep back a few pieces of cauliflower for topping the soup. - Once cooked place all of the ingredients (cauliflower, shallots, garlic, stock, miso, thyme, lemon) into a food processor and blitz until smooth. Add more lemon if preferred and season to taste. - to serve, place in a bowl, top with the reserved cauliflower, thyme leaves and drizzle with extra virgin olive oil.
Enjoy!! For the extra virgin olive oil, I like to use a good quality one so you can really taste it. My favourite at the moment is @belazu_co early harvest extra virgin olive oil. .
